Kevin Kwan and Crazy Rich Asian Chopped Salad

Ingredients

  • 4 cups shredded cabbage or coleslaw mix
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup shelled edamame
  • ½ cup sliced bell pepper
  • ¼ cup chopped green onion
  • ¼ cup chopped cilantro or mint
  • ½ cup crispy wonton strips or toasted almonds

Dressing

  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon grated ginger
  • Juice of ½ lime

Whisk the dressing ingredients in a small bowl. In a large bowl, combine the cabbage, carrots, cucumber, edamame, bell pepper, green onion, and herbs. Pour the dressing over the salad and toss until lightly coated. Top with wonton strips or toasted almonds just before serving.

Kevin Kwan is a best-selling author known for Crazy Rich Asians, the novel that introduced readers to a witty, high-society world of family expectations, romance, and culture. Born in Singapore and later raised in the United States, Kwan has written several popular novels, including China Rich Girlfriend and Rich People Problems. His work helped inspire the hit film adaptation of Crazy Rich Asians.
