Quinta Brunson and Bow Tie Pasta Salad

Ingredients

  • 12 ounces bow tie pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¾ cup mozzarella pearls or cubed mozzarella
  • ½ cup sweet bell pepper, diced
  • ¼ cup sliced black olives, optional
  • ⅓ cup Italian dressing
  • Salt and pepper to taste

Cook pasta according to package directions. Drain and rinse with cool water. In a large bowl, combine pasta, tomatoes, cucumber, mozzarella, bell pepper, and olives if using. Add Italian dressing and toss until coated. Season with salt and pepper. Chill for at least 20 minutes before serving.
